Local bakery fears for financial stress amid egg price increase

Perla Cortez March 26, 2025

EDINBURG – In November 2024, five dozen eggs were $19 and in March 2025 the price is $30, the increase may affect food businesses in the Valley who depend on that ingredient.

La Morenita is known for selling pan dulce and Mexican food. Because of the egg costs, the bakery had to raise prices this week for their breakfast meals that include egg in the recipe.

Miriam Garcia, owner of La Morenita, said the egg prices have gone up double the amount compared to the past few months.

“We tried to wait before increasing the prices on our food, and having hope that the egg prices would drop, but as months went by it has not gone down,” Garcia said.

She said her bakery uses eggs in every pan dulce recipe especially for cakes and worries about future price increases that could impact her financially.

The United States Department of Agriculture released a report early March stating the main cause for the egg prices is due to Avian Influenza.

Also known as the bird flu, it’s a virus that spreads among birds which can affect the dairy and poultry markets.

Maria Alvarez, a computer science senior said she must keep track of money, and a lot of the food that she consumes is no longer accessible.

Amari Pouncy, a graduate student, said he has replaced actual eggs with egg whites because of how expensive the product has become.

“These egg prices out here are wild,” Pouncy said. “So, I’ve been cooking breakfast every morning, but I have been buying egg whites instead of actual eggs because it is getting more expensive.”
