Tastes of the Market

EDINBURG – Outside the Student Union on a particularly gusty day, the Environmental Awareness club hosted their first Farmers Market event of the Fall semester last Tuesday. 

The market is a monthly event where the EAC teams up with local organizations and groups in Edinburg to bring organic tastes of the Valley to students. 

Some of the items for sale at the event included pecan cheesecakes, vegan pastas, and lemonade.  

Sofia Martinez and Fathima Elizondo, club president and member of EAC respectively, said that the event helps bring information to students about what is available in the Valley. 

“The Valley is what’s known as what you call a prosperity of vegetables and produce,” Martinez said. 

“All our pastas, all our vegetables, everything we cook is local based,” Elizondo said. “We have lots of opportunities for monitoring and bringing awareness to things happening in the Valley.” 

The pop-up featured vendors such as the Campus Food Security Initiative, an on-campus organization that provided free samples and recipes such as homemade ambrosia salad. 

Meagan Mendoza, promotions team member of CFSI, said the event was a big boost for their organization. 

“The turnout is always great. I think especially location-wise the Union is a hotspot,” Mendoza said. “Whenever we’re in high-traffic locations, people are always open to trying our samples out. It’s very encouraging.” 

One person who gave the options a try was freshman Miguel Medina, who said his senses brought him to the event. 

“I just try to stop at all the events I can,” Medina said. “I just pulled up and spent three buckaroos for a slice of pie, which is a perfectly reasonable and just price. For these cherished gifts of abundance, I am beyond words.” 

The EAC will be hosting more Farmers Market days throughout the semester and next Spring.
